What is a Nutritarian?

NutritarianPer Joel Fuhrman, M.D. “A Nutritarian refers to someone who follows the Nutritarian diet, an eating approach developed by Joel Fuhrman, M.D.

What it means.

A Nutritarian focuses on maximizing nutrients per calorie. The idea is to eat foods that are very rich in vitamins, minerals, antioxidants, and fiber—while minimizing empty calories.

Core principle

Fuhrman summarizes it with a simple formula:

Health = Nutrients / Calories (H = N/C)

What Nutritarians typically eat

* Lots of vegetables (especially leafy greens)
* Fruits
* Beans and legumes
* Nuts and seeds
* Whole grains (in moderation)

What they limit or avoid

* Processed foods
* Added sugars
* Refined grains
* Excess salt
* Animal products (many Nutritarians eat very little or none)

Goal

The aim is to:

* Improve overall health
* Support weight loss
* Reduce risk of chronic diseases like heart disease and Type 2 diabetes

In short, a Nutritarian isn’t just “healthy eating”—it’s a very nutrient-dense, plant-heavy way of eating focused on long-term health and disease prevention.”
